1 chicken breast, grilled
6 each shitake mushrooms, remove stems, sliced, sautéed in olive oil
¼ cup of Joseph Farms Pepper Jack Cheese, Grated
½ bunch of cilantro, chopped
1 Menlo Brand, Lumpia Wrapper
½ tsp. Cornstarch, mixed with a little water
2 Tbs. Sweet Chili Sauce
½ bunch Scallions, sliced on a bias
-Season the chicken breast with salt, pepper, and olive oil. Grill completely, then cool. Dice in cubes.
-Saute the sliced shitakes with olive oil, cool.
-Combine the diced chicken, cooked mushrooms, chopped cilantro, and grated cheese.
-Place about 2 tbs. of filling in the middle of the wrapper, roll tight, and brush ends of wrapper with the cornstarch mixture to seal.
-Deep fry in vegetable oil @ 350 degrees for 4 minutes, until brown.
-Drain over paper towel, slice on a bias, drizzle chili sauce, and scallions.
